Cultivar: Maracaturra
Process: Fully Washed
Altitude: 1500 to 1700m asl

Across the world Maracaturra is not widely grown by coffee producers but in the cool, high-altitude mountains of Nuevo Segovia that skirt the border with Honduras it remains a well-regarded and often planted tree. This region's dense, lush shade vegetation provides ideal conditions for the cultivar's distinctive large coffee cherries, inherited from its Maragogype lineage.

The slower ripening process is essential for these mammoth beans, fostering denser, sweeter, and more flavourful results. Once roasted and brewed, Maracaturra offers a unique taste profile that showcases the best of Nicaraguan coffee.

This micro-lot comes small holder producers whose farms surround the mountain of El Volcan and join under the banner of a collective of the same name. In years gone by small holders would sell their coffee to be part of larger bulked coffees but this coffee comes from a project helping to give smaller farmers more visibility. Every micro-lot records the families that contribute and, in this instance, the extra care over longer fermentation in processing. This extended fermentation process builds complexity in flavour and raises the coffee quality. This meticulous approach to processing showcases the best of Dipilto's terroir, resulting in a cup that truly represents the region's potential.

We've roasted the coffee lighter to focus on the classic Maracaturra cup profile of fudge like caramels, roasted nut, and dried berry fruit. As the coffee cools, the experience evolves, revealing velvety chocolate notes and white melon undertones.

The smooth, rounded mouthfeel offers a syrupy texture, complemented by a candied lemon citrus acidity on the aftertaste. With the lighter approach to roasting we suggest filter and immersion methods to fully appreciate this micro-lot.
These brewing techniques will balance the lemon citrus acidity, bringing structure and harmony to the taste profile.
